Cranberry, Turkey and Stuffing Sandwiches

These Cranberry, Turkey and Stuffing Sandwiches are a homemade version of a Wawa Country staple: the Gobbler sandwich. Save your Thanksgiving leftover turkey, gravy, stuffing and cranberry sauce to make one yourself.

Some wait for the return of Starbucks Pumpkin Spice Lattes. For others, the surest sign of fall is the return of the Wawa Gobbler: hot turkey smothered in gravy, cranberry sauce and stuffing on a hoagie roll (what some of you insist on calling a sub or hero, but you're wrong).

Wawa is the best gas station/convenience store in the world. Sorry, Sheetz fans, it's just the facts. It was born in Southeastern PA in 1964, and has expanded into states up and down the eastern side of the United States.

Ingredients

You don't need to live in Wawa Country to enjoy this delicious sandwich. With your Thanksgiving leftovers, you can make one at home.

Ingredients for a Thanksgiving leftovers sandwich: turkey, gravy, cranberry sauce, stuffing and club rolls.
  • Hoagie rolls, also known as club rolls or long rolls. These vary in length from 6 inches to 12 inches. The size you get is entirely up to your preference.
  • Leftover turkey, sliced thinly. I've made these sandwiches with traditionally roasted turkey, wet-brined turkey, dry-brined turkey, etc. It all works.
  • Leftover turkey gravy
  • Cranberry sauce, homemade or canned
  • Stuffing

Instructions

In a small saucepan, combine your leftover turkey and gravy. Warm over medium heat. Reheat your stuffing in a separate saucepan or in the microwave.

Slice your rolls horizontally, and spread each side with leftover cranberry sauce.

Pile a few slices of hot turkey onto the roll.

Finally, add stuffing to the sandwich. If your roll is very long, you may want to slice it in half.

Substitutions

You can substitute chicken for the turkey if you don't have Thanksgiving leftovers. You can even request thickly-sliced roasted turkey from the deli counter, and use it in these sandwiches.

No cranberry sauce? Try Georgian plum sauce, rhubarb ginger compote, or lingonberry jam. If you don't like sweet-tart sauces, you can even omit it altogether; the gravy by itself is enough to keep the sandwich from getting dry.

No stuffing; or not a fan? Use mashed potatoes instead. Plain mashed potatoes work fine, as do potatoes with sour cream, with chives, mashed sweet potaotes, etc.

Top tip

These sandwiches are a delicious way to use up Thanksgiving leftovers, but if you can't find club rolls, these are just as delicious served in a bowl! Place the stuffing in a bowl, pile the turkey and gravy on top, and finish with a dollop of cranberry sauce.

Ingredients

  • 1 cup leftover turkey gravy
  • 8 ounces leftover turkey, thinly sliced
  • 2 club sandwich rolls, sliced horizontally
  • ¼ cup leftover cranberry sauce
  • ½ cup leftover stuffing

Instructions

  1. Warm the gravy in a medium saucepan over medium heat. When just starting to simmer, add the turkey meat, and heat just until the turkey meat is warmed through.
  2. Split the club sandwich rolls, and spread 2 tablespoon of cranberry sauce on both sides of each roll.
  3. Divide the turkey meat and stuffing between each sandwich roll. Spoon more gravy over top, if desired.
  4. Serve warm.
