Sweet Cornbread

Today, I'm sharing a classic cookout side dish: cornbread. I prefer my cornbread sweet and buttery, which this one is — all it needs is a drizzle of honey! Though I won't judge if you put an extra pat of butter on top.

If you want to make a batch for a larger crowd, double the ingredients and bake in a 9x13 pan. It will likely need to bake longer as well. You may want to make a large batch even for a small crowd. It's hard to stop with just one piece!

Sweet Cornbread

Yield: 16 servings
Prep Time: 10 minutes
Cook Time: 25 minutes
Total Time: 35 minutes

Ingredients

  • ⅓ cup buttermilk, at room temperature
  • 2 large eggs, at room temperature
  • ⅓ cup unsalted butter, melted
  • 1 cup all-purpose flour
  • ½ cup cornmeal
  • ½ cup sugar
  • 1 ¼ teaspoon baking powder
  • ¼ teaspoon baking soda
  • 1 teaspoon salt

Instructions

  1. Preheat oven to 400 degrees. Spray an 8x8 baking pan with nonstick spray. 
  2. In a small bowl, stir together the eggs, buttermilk and melted butter.
  3. In a larger bowl, stir together the flour, cornmeal, sugar, baking powder, baking soda and salt. 
  4. Pour the wet ingredients over the dry ingredients, and stir just until all of the dry ingredients are moistened. Scrape the batter into the prepared pan. 
  5. Bake for 20 to 25 minutes, or until a paring knife inserted in the center of the cornbread comes out clean. 
  6. Cut into four rows and four columns for 16 squares, and serve.
