Pumpkin Chocolate Chip Brioche Bread Pudding

Yield: 8 servings
Prep Time: 10 minutes
Cook Time: 1 hour
Total Time: 1 hour 10 minutes

Ingredients

  • 16 oz loaf of St Pierre Bakery chocolate chip broiche bread, sliced, stale
  • 4 large eggs
  • 2 cups whole milk
  • 2 cups heavy cream
  • 1 teaspoon vanilla
  • 1 ½ teaspoon cinnamon
  • ½ teaspoon ginger
  • ⅛ teaspoon nutmeg
  • ⅛ teaspoon ground cloves
  • 15 oz pumpkin puree

Instructions

  1. Preheat oven to 350 degrees.
  2. In a large bowl, whisk the eggs, milk, cream, vanilla extract, spices and pumpkin purée. Set aside.
  3. Cut the stale bread into cubes, and spread in a layer in a greased 9x13 baking dish.
  4. Pour the pumpkin mixture over the bread cubes.
  5. Bake uncovered for 45 to 60 minutes. The bread pudding will puff up and should spring back when lightly pushed.

This is ridiculously tempting. I have such a weak spot for brioche and to see it turned into a pudding with the pumpkin and chocolate is total decadence. Pinned!
