    Recipe Swap: French Dip Sandwiches

    Blogger's Choice time again!

    My assigned blog this time around was Becoming Pigzilla. She has a lot of good recipes to choose from, like Hummus Turkey Burgers, Buffalo Chicken Wonton Cups, and Salted Caramel Cheesecake Bites.

    However, The Peanut has entered his clingy phase. Like clockwork around 4 p.m., when I'm starting dinner prep, Liam wants to be held. Yes, I could wear him in my Boba carrier (like I used to wear him in the Moby when he was a newborn), but he's a bit taller now, so I can't see over his head. He's also a bit grabby, and the last thing I want is him trying to grab my chef's knife!

    So, I chose a recipe that both sounded delicious, and required little prep: French dip sandwiches that cook in the crock pot.

    These were perfect! I chopped the onions and seared the roast during Peanut's morning nap. The sandwiches were ready and waiting when The Mister walked in the door from work. I opted to make the jus out of beef broth and beer. I used a English-style mild ale called a Brawler by Yards Brewery (a local brewery). The meat had great flavor, came out very juicy, and was so tender and easy to shred. We both really enjoyed the sandwiches.

      I'm feeling even more motivated to break out my crockpot for the first time and make these! And I totally feel you on the clingy kid thing during dinner prep time. So hard, but this too shall pass πŸ™‚
