Scones are almost like cookies, though a bit less sweet. These are American-style scones, which are slightly more moist than British style scones.
These are flavored with fresh cherries, and Taylor and Colledge almond extract paste. The extract paste is a concentrated extract that packs a punch of almond flavor. Because the paste is concentrated, you don't need to add as much.
Scones, like pie dough, are made by cutting cold butter into the dry ingredients to create a crumbly texture. To minimize the time working with the butter and keeping it cold, I use a food processor, pulsing just until the mixture resembles coarse crumbs.
Ordinarily, I would press the dough into one large disc and cut it into eight wedges, but this would crush the fresh cherries. For that reason, I transferred the crumbly mixture to a bowl, folded in the cherries, and used a large scoop to portion out the dough.
For that reason, these scones are slightly smaller than they otherwise would be. So, I won't judge if you grab two!
As I said, these aren't very sweet. If you prefer a sweeter scone, you could make a simple icing with powdered sugar, milk, and a few drops of the almond extract paste to drizzle on top of the scones.
Cherry Almond Scones
Ingredients
- 2 cup flour
- ½ cup brown sugar
- 1 tablespoon baking powder
- 1 teaspoon salt
- ½ cup cold unsalted butter, chilled
- ½ cup heavy cream (plus more to brush scones)
- 1 teaspoon Taylor and Colledge Almond Extract Paste
- 8 oz pitted, quartered fresh cherries (weight after pitting)
Instructions
- Preheat oven to 400 degrees F. Line two baking sheets with silicone baking mats or parchment paper.
- Place the flour, sugar, baking powder and salt in the bowl of a food processor. Pulse a few times to mix.
- Add the cubed butter. Pulse a few times to cut the butter into the flour mixture.
- Mix together the cream and the extract paste. Add to the flour mixture and pulse a few times until large clumps form.
- Transfer the dough to a mixing bowl, and add the cherries. Gently fold the cherries into the dough.
- Use a large scoop to portion the dough onto the prepared sheets. Gently press down with floured hands on each scoop to flatten slightly.
- Brush each scone with a scant layer of cream. Bake for 15 minutes.
- Remove from the oven and cool to room temperature. Scones can be stored in an airtight container at room temperature for up to a week.
