For the most part, I liked school as a child. I loved shopping for back to school supplies, I loved picking out a new backpack and lunch box, and I genuinely enjoyed learning.
And every year, my brother and I would get a special “first day of school” breakfast before getting our “first day of school” photos taken and finally going off to school.

It was usually donuts or muffins, which, while tasty, were nothing like these amazing Nutella waffles. We didn’t own a waffle maker, and Nutella wasn’t as popular back in the 1980s as it is now.
Nutella waffles are really easy to make, similar to making pancake batter from scratch. The Nutella is warmed together with butter to make it easier to mix into the waffle batter.

The strawberry syrup is also very easy. It’s essentially a simple syrup (equal parts sugar and water, cooked until the sugar dissolves) flavored with fresh strawberries. You can make this a day ahead of time and refrigerate it until ready to use.
Leftover Nutella waffles freeze well, and can be reheated and enjoyed as an after-school snack!

Nutella Waffles with Strawberry Syrup
Get the kids excited for the first day of school with a special-occasion breakfast: Nutella waffles with easy homemade strawberry syrup!
Ingredients
For the strawberry syrup
- 1 cup sugar
- 1 cup water
- 2 cups strawberries, hulled and quartered
For the waffles
- 2 tbsp unsalted butter
- 2 tbsp Nutella spread
- 1 large egg
- 1 cup whole milk
- 1/2 tsp vanilla extract
- 1 cup flour
- 2 tbsp cocoa powder
- 1/4 cup sugar
- 1 tsp baking powder
- 1/2 tsp salt
Instructions
- Make the strawberry syrup: place the sugar and water in a large saucepan (the syrup will bubble up a lot while cooking). Heat over medium-high heat until the sugar has dissolved.
- Add the strawberries. Cook a boil for 10 minutes.
- Strain into a pitcher, pressing lightly on the pulp. Discard the pulp. Set aside to cool.
- Make the waffles: combine the butter and Nutella in a small, microwave-safe bowl. Heat until the butter melts, then stir until smooth. Set aside.
- In a large bowl, mix together the egg, milk, and vanilla.
- In a separate bowl, stir together the flour, cocoa powder, sugar, baking powder and salt.
- Pour the dry ingredients over the wet ingredients and stir`until smooth. Add in the Nutella/butter mixture and stir until fully incorporated.
- Preheat a waffle iron to medium heat. Cook the waffles according to your waffle maker's instructions.
- Serve with fresh strawberries and the strawberry syrup.
