I really try to make an effort to meal-plan a week in advance, and to remember to defrost whatever protein is needed for dinner that night.
But sometimes, such as when Daylight Savings Time ends and a certain 11-month-old baby wakes up at 3:30 a.m., things slip my mind (can't imagine why). And so I'm occasionally left scrambling to come up with something using what's in my pantry.
Thankfully, this household is a huge fan of breakfast for dinner. I was in a French toast mood, but wanted a twist. In a search of French toast recipes, I found a slideshow on Huffington Post with links to 21 French toast recipes. The Pumpkin French Toast recipe from With Style and Grace caught my eye.
The original recipe is gluten-free. Gluten isn't a concern in our family, so I simply used whole wheat bread. Being a fan of all things pumpkin, I loved these. The pumpkin isn't overpowering, nor is the French toast overly sweet. I think this would taste even better using brioche rather than whole wheat sandwich bread.
